Champagne Oysters
Champagne Oysters typically refers to the pairing of oysters with Champagne, a classic combination in fine dining. The briny, delicate flavor of fresh oysters is complemented by the crisp, effervescent qualities of Champagne.
Ingredients
- 300ml champagne or sparkling white wine
- 2 green shallots, finely chopped
- 300ml double cream
- 18 natural oysters, in the half shell
- Freshly ground white pepper
- Chopped fresh chives, to serve
Instructions
- Place the champagne and shallot in a small saucepan over medium-high heat. Bring to the boil. Simmer for 5-8 minutes or until mixture reduces by half.
- Reduce heat to medium-low. Add the cream and any juice from the oyster. Season with white pepper. Simmer for 20 minutes or until the sauce reduces by half (you should have about 300ml of sauce).
