Cuban Carne Con Papas Recipe

Instructions
- In a large Dutch oven or pot, heat the olive oil over medium-high heat.
- Add the chopped beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
- Add the onion, garlic, and bell peppers to the pot and cook until softened, for approximately 5 minutes.

- Reduce the heat to low, cover the pot, and let the stew simmer for 1 to 2 hours, or until the beef is tender and the potatoes are cooked through.
