Chilean Brazo de Reina Recipe

Brazo de Reina, meaning "queen's arm," is similar to a Swiss roll. The "brazo" name is also used for other desserts made with rolled cake and filling in various countries. For example, Brazo de Mercedes is a meringue cake filled with custard, while Brazo de Gitano is a Spanish sponge cake roll filled with jam and cream.

Ingredients
  

  • 6 Eggs
  • 1 cup Confectioners' sugar
  • 1 cup Flour
  • 2 tsp Baking powder
  • Dulce de leche
  • Powdered sugar

Instructions
 

  • Preheat the oven to 350 F
  • Line a baking sheet with parchment paper.
  • Sift the flour and baking powder together.
  • Separate the yolks from the whites.
  • Whip the egg whites until stiff.
  • While still whipping, gently stir in the sugar.
  • Add the egg yolks one at a time.
  • Fold in the sifted flour.
  • Pour onto the lined baking sheet.
  • Bake for 8 to 10 minutes. Do not let it brown.
  • On another parchment, sprinkle some powdered sugar then turn the hot cake out into it.
  • Remove the parchment it was baked with.
  • Immediately roll up the cake using the dusted parchment. Let it cool.
  • Unroll and spread a layer of dulce de leche over the cooled cake.
  • Roll the cake again and sprinkle with icing sugar.
