Ingredients
  

  • 1 lb Beef sirloin (cut into thin strips)
  • 1 Red onion (sliced)
  • 2 Tomatoes (sliced)
  • 1 Yellow bell pepper (sliced)
  • 3 cloves Garlic (minced)
  • 1/4 cup Soy sauce
  • 2 tbsp Red wine vinegar
  • 1/4 cup Fresh cilantro (chopped)
  • 2 cups French fries
  • 4 cups Cooked white rice
  • 2 tbsp Vegetable oil
  • Salt and pepper – to taste

Instructions
 

  • In a bowl, marinate the beef strips with soy sauce, red wine vinegar, salt, and pepper for about 15 minutes.
  • Heat vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir-fry until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  • In the same skillet, add a bit more oil if necessary, and sauté the minced garlic until fragrant. Add the sliced onion and bell pepper, stir-frying until they begin to soften.
  • Add the sliced tomatoes to the skillet and cook for another 2-3 minutes.
  • Return the beef to the skillet, mixing it with the vegetables. Cook for an additional 2 minutes, allowing the flavors to meld together.
  • Stir in the fresh cilantro and remove from heat.
  • Serve the Lomo Saltado hot with a side of French fries and cooked white rice.
