Bhutanese Ema Datshi Recipe

'Ema' translates to chili, while 'datshi' refers to a traditional Bhutanese cottage cheese. The spiciness of the dish can vary from mild to extremely hot, utilizing either fresh or dried chili peppers. In Bhutanese cuisine, chilis are consumed as a regular vegetable. To enhance the creaminess of the cheese, butter may be added, creating a richer sauce.

Ingredients
  

  • 8 oz Jalapeños (quartered)
  • 1 tsp Green chillies (slit)
  • 1 cup Onions (sliced)
  • 1 tsp Garlic (roughly chopped)
  • ½ cup Tomatoes (diced)
  • 1 cup Cheese (grated)
  • 2 tsp Butter
  • 1 tsp Vegetable oil
  • 1 tsp Salt
  • 1 ¼ cup Water

Instructions
 

  • Remove the stalks off the chilli peppers and cut them in quarters lengthwise.
  • Slit the green chillies – removing the pith will reduce the spiciness if desired.
  • Slice the onions, roughly chop the garlic, and dice the tomatoes.
  • Add all the ingredients to the pan along with the salt, oil, and water.
  • Turn on the heat and cover the pan with a lid.
  • Allow everything to boil on medium heat for 15 minutes until the peppers have softened.
  • Turn off the heat then add the butter and grated cheese.
  • Stir until the cheese has melted.
  • Taste and adjust the salt. Serve hot with boiled rice.
