Jamaican Coco Bread Recipe
Coco Bread is a soft, sweet bread from Jamaica made with coconut milk and flour. It is shaped into a crescent and is commonly served with a Jamaican patty inside, although it can also be enjoyed on its own or with various fillings.
Ingredients
- 4 cups All-purpose flour
- 1/4 cup Sugar
- 1 tbsp Active dry yeast
- 1/4 cup Warm water
- 1 cup Coconut milk
- 4 tbsp Butter (melted)
- 1 tsp Salt
Instructions
- In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Add the yeast mixture, coconut milk, and melted butter. Mix until a soft dough forms.
- Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Preheat the oven to 350°F (175°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then flatten into a circle about 1/4 inch thick.
- Place the dough circles on a greased baking sheet. Brush with melted butter and fold in half.
- Bake for 15-20 minutes, or until golden brown.
- Serve the Coco Bread warm, either plain or filled with your favorite savory fillings.
