Guatemalan Pastel de Banano Recipe
This cake is made with local ingredients like cinnamon and vanilla extract and is often enjoyed alongside a cup of coffee, another major Guatemalan export.It’s also popular as a post-workout treat, given bananas' energy-boosting qualities. Each year, on February 23rd, the cake is celebrated in the United States as Día del Pan de Banano.
Ingredients
- 3 Ripe bananas (mashed)
- 2 cups All-purpose flour
- 1 cup Sugar
- 1 tsp Baking soda
- 1 tsp Baking powder
- 1 tsp Ground cinnamon
- 2 Eggs
- 1/2 cup Vegetable oil
- 1 tsp Vanilla extract
- 1/2 tsp Salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a bowl, combine flour, sugar, baking soda, baking powder, cinnamon, and salt.
- In another bowl, mix mashed bananas, eggs, vegetable oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Pour the batter into the prepared baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool before serving.
