Vegetable and Edamame Stir Fry with Spicy Rice Recipe
This flavorful edamame stir fry features a mix of Asian vegetables and edamame beans, all sautéed and glazed with ginger, garlic, honey, soy, and teriyaki sauce. It's served over a bed of ginger and chive rice, making it an excellent choice for both vegetarians and vegans.
Ingredients
Edamame stir fry
- 2 cm fresh ginger
- 1 cloves garlic
- 80 grams edamame beans
- 1 packet oriental vegetable stirfry mix
- 0.5 tbsp honey
- 3 tbsp teriyaki sauce
- 1 tbsp soy sauce
Rice
- 1 tbsp fresh chives
- 2 cm fresh ginger
- 100 grams basmati rice
Instructions
- add some boiling water to the pan, add the rice and cook till soft
- peel and crush the garlic using the garlic crusher or chop finely, defrost the edamame beans, peel and grate the ginger
- Heat the wok add a spot of oil, add the garlic and ginger to the wok, cook for a minute or two, add the edamame beans to the wok, cook for 3 to 4 mins
- peel and grate the ginger, wash and chop the chives, rinse and drain the rice, add the ginger and chives to the rice, keep the rice warm on a low light
- add the stir fry vegetables to the wok, cook for 3 to 4 mins, mix the teriyaki sauce, soy sauce and the honey together, add to the wok, cook till vegetables are tender, remove the vegetables from the wok
- add the rice to the serving plate, place the vegetable and edamame stir fry on top of the rice, serve immediately
