Learn how to make Bendekai palya or bhindi stir fry with a detailed, step-by-step pictorial guide. This delicious dish is made using ladies finger, onion, garlic, green chili, red chili, and curd. Bendekai palya or bhindi sabzi pairs wonderfully with rice or chapathi. It's not only flavorful but also a nutritious stir fry recipe. This recipe is similar to Andhra style Lady's finger fry. I have used garlic in this recipe, which you can replace it with asafoetida. I have also used curd in this recipe and that can be replaced by lemon juice.

Ingredients
  

  • 1/4 kg bendekai or lady's finger
  • 2 – 3 tbsp cooking oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 red chili
  • 1 – 2 green chili
  • 4-5 curry leaves
  • 2 – 3 cloves of garlic
  • 1 medium sized onion
  • A big pinch of turmeric powder
  • 2 tbsp curd or 1 tbsp lemon juice
  • Salt as per your taste

Instructions
 

  • Wash, pat dry and chop the ladies finger by discarding the ends. Also chop garlic and onion.
  • Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds and 1/2 tsp cumin seeds.
  • When the mustard seeds splutters and in broken red chili.
  • Immediately add in slit green chili, chopped garlic and curry leaves.
  • Followed by add in chopped onion.
  • Fry until onion turns translucent.
  • Add in chopped ladies finger. Stir for 2 minutes under high flame.
  • Reduce the flame. Add in turmeric powder and curd.
  • Give a quick mix and close the lid. Cook the ladies finger under low flame.
  • Stir in between and cook until soft under low flame.
  • At the end sprinkle the salt and give a quick mix. Serve it with hot rice or chapathi.
