
Moth Beans Sabi
The recipe for Moth/Math/Matki beans is rapid, uncomplicated, and nutritious. Matki or Moth, a prevalent legume in India, is often enjoyed as a main course or side dish.
Ingredients
- Moth beans / Math – 1 cup Yields 3 cup after soaking overnight.
- Salt to taste
- Turmeric powder – ½ tsp
- Red chili powder – 1 tbsp
- Cumin and coriander powder – 1 tbsp
- Lemon juice – 2 tbsp
- Water – 500 to 600 ml or as required.
- Oil – 3 tbsp
- Chopped cilantro for garnishing.
Instructions
- Soak Moth beans overnight or at least 6 hours in water.
- Drain all the water from the soaked moth beans. Heat oil in a pan. Add soaked moth beans. Stir it once. Add salt and turmeric powder. Mix well. Add water, mix, cover it and let it cook for about 10 minutes or until moth beans are tender. Stir occasionally.
- Once moth beans are tender, add chili powder, cumin and coriander powder and mix them well. Let it cook for another 2 minutes over medium heat. Add some water if needed.
- Switch off the flame and squeeze lemon juice. Mix well.
- Math Nu Shaak is ready. Garnish it with some chopped cilantro and serve it with Phulka, Rice and Gujarati Kadhi.
