Aloo fry recipe

Potatoes are known for their delicious flavor and are particularly beneficial for growing children. In this recipe, I have chosen not to peel the potatoes, opting instead to thoroughly wash them, as potato peels are believed to help with acidity. To add an extra layer of taste, I have utilized 1 tsp of readily available Kitchen King masala powder, which greatly enhances the flavor of the curry. However, if you don't have it on hand, you can substitute it with 1/2 tsp of garam masala powder or 1 tsp of pav bhaji masala powder. Additionally, 1 tsp of rasam powder or a mixture of 1 tsp of coriander powder and 1/2 tsp of cumin powder can also be used as alternatives.
Ingredients
- 4 medium sized potatoes
- 1 large onion
- 1 medium sized tomatoes
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 red chili
- 1/4 tsp turmeric powder
- A big pinch hing / asafoetida
- 5 – 6 curry leaves
- 1 tsp kitchen king masala or 1/2 tsp garam masala
- 1/2 – 1 tsp red chili powder
- Salt as per your taste
- 2 tbsp cooking oil
Instructions
- To beginwith, chop the onion, tomatoes and potatoes. Keep all other ingredients ready.
- Take a frying pan and heat the oil. Add in mustard seeds and cumin seeds.
- When the mustard seed splutters add in broken red chili.
- Followed by add in chopped or sliced onion.
- Also add in curry leaves, turmeric powder and asafoetida. Fry until onions are soft.
- Add in chopped tomato. Fry until tomatoes are soft and cooked.
- Next add in chopped potatoes and give a quick mix. I have not peeled the potatoes. Instead I have washed them well. Because potato peels are said to be good for acidity.
- Add in salt. Give a quick mix.
- Also add in few table spoons of water. Give a quick mix.
- Close the lid and cook the potatoes under low medium flame. Stir in between and add more water if required.
- When the potatoes are cooked and soft, add in kitchen king masala powder and red chili powder.
- Give a quick mix and switch off the stove. Serve it with either chapathi or rice.
