Ingredients
- 2 tender bitter gourds
- 1/4 tsp turmeric powder
- A big pinch hing or asafoetida
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 – 1 tsp amchur powder
- 1/2 tsp garam masala powder
- 1 tsp crushed fennel seeds
- 1 tbsp gram flour or kadle hittu
- Salt as per your taste
- 3 – 5 tbsp cooking oil
Instructions
- To begin with rinse and slice the bitter gourd thinly. After slicing deseed them. Optionally you can soak them in salt water to remove the excess bitterness.
- Take a thick bottomed frying pan and heat 2 tbsp of oil. Add in bitter gourd slices.
- Start fying them under low flame until the slices are cooked and turns brown here and there. Add in oil if required.
- After frying add in salt, asafoetida, turmeric powder and red chilli powder.
- Followed by add in coriander powder, cumin powder, amchur powder and garam masala.
- Give a quick mix. Add in oil if required. After frying for a minute add in crushed fennel seeds.
- Give a quick mix. At the end add in a tbsp of gram flour (besan or kadle hittu)
- Continue frying for 2 more minutes. Add in oil if you find it very dry. Switch off the stove and serve it with plain rice or curd rice.
