Aloo jeera recipe

I acquired this recipe from a Konkani friend, but later discovered that turmeric powder is typically not included in the preparation. Therefore, I have designated turmeric powder as optional. Furthermore, if you are able to cook the potatoes without water, there is no need to add any. For those who enjoy the taste of garlic, you can substitute asafoetida with crushed garlic. To enhance the visual appeal of your potato talasani, consider garnishing it with grated coconut and coriander leaves. Although these additions are not part of the original recipe, they can add an extra touch. Konkani recipes are known for their unique simplicity, avoiding excessive use of ingredients. This potato upkari pairs exceptionally well with rice and dalithoy, a Konkani-style dal.
Ingredients
- 3 medium sized potatoes
- 2 tsp cumin seeds
- 1 green chilli (adjust as per your taste)
- 1/4 tsp turmeric powder
- Big pinch of hing or asafoetida
- 1/2 tsp spicy red chili powder
- 2 tbsp chopped coriander leaves
- 1/2 tsp lemon juice (optional)
- Salt as per your taste
- 1 tbsp cooking oil
Instructions
- Boil and peel 3 medium sized potatoes. Please note, I have added little salt while boiling the potatoes.
- Chop them into cubes.
- In a pan heat a tbsp of oil. Add cumin seeds and slit green chillies.
- Wait until cumin seeds splutter. Add in chopped potatoes and saute.
- Add in chilli powder, turmeric and asfoetida.
- Give a quick mix.
- Add in chopped coriander leaves and lemon juice. Please note, lemon juice is optional. Give a quick mix.
- Add in salt as per taste. Give a quick mix and switch off the stove. Serve it with chapati or roti. Or serve it like a starter.
