No coconut chutney recipe
Discover how to make a delicious no-coconut chutney, also known as hurigadale chutney, with this comprehensive recipe that includes step-by-step pictures and a helpful video. The key ingredients for this chutney are roasted gram (hurigadale or putani or kadlepappu), red chili, and garlic. It pairs perfectly with dosa or idli. Additionally, I have shared a recipe for hotel-style idli-sambar and a simple white coconut chutney, both of which are commonly served in hotels.
Ingredients
- 1/2 cup roasted gram or hurigadale or kadle pappu
- 1-2 red chillies or green chillies
- 3-4 cloves of garlic (or big pinch asafoetida)
- Little jaggery (optional)
- little tamarind
- Salt as per your taste
Ingredients for tempering:
- 1/2 tsp mustard seeds
- 1/2 tsp urad dal
- 1 red chilli
- 1 tsp cooking oil
- 4 curry leaves
Instructions
- Take roasted gram or hurigadale in a mixie jar.
- Add in red chillies as per your spice level. You can replace red chillies with green chillies as well.
- Add in garlic. If you don't like garlic replace it with a big pinch of asafoetida.
- Grind everything together into a coarse powder. Add in salt as per your taste
- Also add in very little jaggery and little tamarind. Please note, jaggery is optional.
- Add in required water and grind it into a fine paste. Transfer it into a serving bowl.
- Temper it with oil, mustard seeds, urad dal, red chilli and curry leaves.
- Serve it with idli or dosa. I had served it with neer dosa.
