The Ultimate Batter (Instant Appam, Dosa, Uttapam)

The Ultimate Batter is a versatile, instant mix specially crafted to prepare a variety of popular South Indian dishes like Appam, Dosa, and Uttapam. Ingredients
  

  • Sooji (semolina) – 200gm (1cup +2tbsp)
  • Yoghurt – 100gm (8tbsp)
  • Salt – ¾ tsp
  • Sugar – ¾ tsp
  • water – 1 cup
  • Eno (fruit Salt) or Baking Soda – 1½ tsp 

For Uttapam

  • Tomatoes, Chopped – 3tbsp
  • Onion, Chopped – 3 tbsp
  • Ginger, Chopped – 2tsp
  • Green chilli chopped – 1 no 
  • Coriander chopped – handful 
  • Oil – To Drizzle

Instructions
 

  • Step 1: Grind semolina with curd, salt and some powdered sugar. add water to it and grind it till it forms a batter.
  • Step 2: Give it a rest for 5 minutes.
  • Step 3: To ferment the batter, add baking soda or Eno. the batter is ready after that.
  • Step 4: To make an appam, add the batter to a pan, in the centre. It will spread itself. Cook it till you see air pockets on the top.
  • Step 5: To make dosa, spread the batter evenly on a pan, in a circular motion. Add some oil to the top.
  • Step 6: To get a crisp dosa, keep the batter thick, for a flaky one, keep it very thin with more oil. Roll the dosa with your hands and it’ll be ready.
  • Step 7: To make the uttapam, add the batter in one place and don’t spread it around.
  • Step 8: After adding the batter, wait for 10 to 15 seconds and add your favourite toppings.
  • Step 9: Cook till the air pockets are visible and cook it only from one side and your uttapam will be ready.
