wash and finely chop the chilli, peel and crush the garlic using the garlic crusher or chop finely, peel and grate the ginger, place the garlic, ginger and chilli in a bowl
squeeze the lime(s), add to the bowl, add the oil, fish sauce, and honey to the bowl, mix the ingredients, season with salt and pepper
heat the griddle pan, season the steak with salt and pepper, cook the steak for a minute or 2
while the steak is cooking
wash and chop the lettuce, add to the bowl, wash and remove the stalks from the coriander, wash and remove the stalks from the mint
turn the steak over and cook for a minute or 2
wash and remove the stalks from the basil, add the herbs to the lettuce, set a side
rest the steak for 5 mins
chop the peanuts, pour half the dressing over the salad, toss to mix, place the salad in a serving bowl
cut the steak into 2cm slices, place on top of the salad, add the chopped peanuts
