Punjabi Til Bhugga

Ingredients
  

  • Sesame (तिल) – 1¼ cup (175 gms)
  • Sugar (चीनी) – ¾ cup (150 gms)
  • Mawa (खोया) – 400 gms
  • Black Cardamom (काली ईलाइची) – 4 nos
  • Almonds, halved (बादाम) – handful

Instructions
 

  • Heat a pan over medium heat. Add sesame seeds and roast them. Keep stirring continuously to prevent burning. Once roasted, transfer the sesame seeds to a plate and let them cool. Grind half the roasted sesame coarsely. Then mix it with the roasted sesame seeds kept aside after grinding it.
    Crumble or grate the Mawa. In a pan, cook the Mawa over low heat until it’s melted and releases a nice aroma. Keep stirring to avoid sticking to the bottom.
  • Add khoya, powdered sugar to the sesame seeds. Mix them up. Crush the black cardamom pods and remove the seeds. Pound the seeds into a coarse powder. Add this to the mixture.
  • Apply some ghee on your palm and take small portions of the mixture and shape them into round or disc-like pieces. Garnish each Til Bhugga with almonds, chopped pistachios and roasted sesame on top.
