For Matar Paneer Filling
- Butter – 1½ tbsp
- Cumin – 1 tsp
- Green Peas – 1½ cups
- Paneer, crushed – 1 cup or 125 gms
- Salt – to taste
- Onion, finely chopped – 4 tbsp
- Ginger, finely chopped – 2 tsp
- Green chilli, chopped – 1 no
- Salt – to taste
- Coriander seeds, pounded – 2 tbsp
- Chilli Powder – 1 tsp
- Kasoori methi leaves – a pinch
- Chaat Masala – 2 tsp
- Anardana, pounded – 2 tsp
- Garam Masala – ½ tsp
- Coriander, chopped – handful
For Paneer Sandwich
- Bread Slices – 8 nos
- Butter – 4 tbsp
- Mint Chutney – ½ cup
This Matar Paneer Sandwich is an excellent breakfast option, food for picnic baskets, tiffin and for kids lunch box or any time of the day snack.First step is to prepare the stuffing for this tasty sandwich. Melt butter in a pan and add cumin, stir and add green peas. Sprinkle some salt and cook on high heat for 2-3 mins and then remove them to a bowl. Use a potato masher to crush the potatoes. Do not make a paste of the peas.Crush and add paneer to it along with onions, ginger, green chilli, salt, coriander seeds, chilli powder, kasoori Methi, chaat masala and anardana (pomegranate seeds dried). Anardana is optional here. Sprinkle some garam masala and freshly chopped coriander. Mix this and check and correct the seasoning. The mixture is ready and this can be used for a paratha, roll or a sandwich. For making a sandwich, smear soft butter on one side of the sliced bread. Place the butter side down and then apply some mint chutney on one slice of the bread. Then generously palace the matar paneer filling and then cover it with another slice of bread. Again, the butter side of the slice has to be on the top.Repeat the same with the remaining slices. Now you can make a sandwich in a toastie or sandwich griller or can cook it on a pan or tawa. Make sure to heat the tawa to medium hot and then cook on both sides till the bread gently browns and turns crispy. Remove, cut and serve it hot.
