Marinated Feta

- 12 oz. firm feta, cut into cubes
- 1/3 c. olive oil
- 2 cloves garlic, thinly sliced
- 1 small red chile, thinly sliced
- 1 strip lemon zest, thinly sliced, plus 1 tablespoon lemon juice
- 1 small sprig fresh rosemary (needles only)
- Kosher salt
Arrange feta in shallow bowl. In skillet, warm oil, garlic, chile, lemon zest, and rosemary on low until garlic is golden brown, about 5 minutes. Remove from heat and stir in lemon juice. Spoon warm oil mixture on top of feta and let sit 10 minutes. Sprinkle with salt and serve.
