Maharashtrian Kadhi Recipe

- 1 cup Hung Curd (Greek Yogurt)
- 4 tablespoon Gram flour (besan)
- 1 tablespoon Sugar
- 1 teaspoon Mustard seeds (Rai/ Kadugu)
- 1 teaspoon Cumin seeds (Jeera)
- 1 inch Ginger, grated
- 1 Green Chilli , chopped
- 1 sprig Curry leaves, chopped
- 1 sprig Coriander (Dhania) Leaves, chopped
- 1 pinch Asafoetida (hing)
To begin making the Maharashtrian Kadhi Recipe, first mix the yogurt and besan in a bowl. Add 1 cup water and whisk it to a smooth mixture without any lumps.
Heat a saucepan with oil, add mustard seeds and cumin seeds, leave it to splutter for 10 seconds.
Add asafoetida, green chilli, ginger and curry leaves and fry them for 10 more seconds till the aroma is released.
At this stage you can add the yogurt and besan mixture and keep at a low heat and leave it to boil. Keep whisking till it thickens.
Add salt and sugar and adjust it according to your taste. Switch off the heat.
Once the kadhi is ready, garnish the kadhi with some chopped fresh coriander leaves.
Serve the Maharashtrian Kadhi Recipe along with Gajarachi Koshimbir, Steamed Rice and a roasted Papad for a delicious weekday meal.
