Lemon Rice, Tomato Raita
- Oil (तेल) – 3 tbsp
- Mustard Seeds (सरसों के बीज) – 2 tsp
- Dry Red Chillies (सूखी लाल मिर्च) – 3 nos
- Urad dal (उड़द दल धुली) -2 tsp
- Chana Dal (चना दाल) – 1 tbsp
- Heeng (हींग) – ½ tsp
- Ginger, chopped (अदरक) – 1 tbsp
- Green Chillies, chopped (हरी मिर्च) – 2 nos
- Peanuts, roasted (मूंगफली) – 2 tbsp
- Cashew Nuts (काजू) – 8-10 nos
- Curry Leaves (कड़ी पत्ता) – 1-2 sprigs
- Turmeric Powder (हल्दी पाउडर) – 1 tsp
- Boiled Rice (चावल) – 3 cups
- Salt (नमक) – to taste
- Water (पानी) – a dash
- Lemon Juice (नींबू का रस) – 4-5 tbsp
For Tomato Raita
- Oil (तेल) – 3 tbsp
- Heeng (हींग) – ½ tsp
- Mustard Seeds (सरसों के बीज) – 1 tsp
- Dry Red Chillies (सूखी लाल मिर्च) – 2 nos
- Chana Dal (चना दाल) – 2 tsp
- Urad dal (उड़द दल धुली) – 1 tsp
- Curry Leaves (कड़ी पत्ता) – a sprig
- Tomato, chopped (टमाटर) – 1½ cup
- Salt (नमक) – to taste
- Coconut, grated (नारियल) – ¼ cup
- Cumin (जीरा)- 1 tsp
- Green Chilli (हरी मिर्च) – 1 no
- Water (पानी) – a dash
- Curd – 2 cups
- Salt (नमक) – to taste
Lemon Rice
For lemon rice, in a hot pan, add some oil, mustard seeds, dried red chillies, urad dal and chana dal, so that it could give a light crunch, now Heeng, ginger, green chillies, some roasted peanuts, curry leaves, turmeric powder, remember to lift the pan while mixing turmeric so that it won’t get burnt, after a quick stir add rice and salt to taste.Give it a toss and make sure there are no lumps. Sprinkle a dash of water. Now we have to add the key ingredient, that is lemon! Squeeze lemon to the rice and give it a nice toss and mix it well. Taste some, check and correct the seasoning. Serve it hot and enjoy with any sort of raita or chutney.!
Tomato Raita
For tomato raita, in a hot pan, add some oil and then add Heeng, mustard seeds, dried red chillies urad dal, chana dal, curry leaves, and now add roughly chopped tomatoes. Add some salt to Faten the cooking process of tomatoes.Now in a mixer grinder jar, add grated coconut, cumin, green chillies, and a dash of water. Grind it into a thick paste. Now make sure the tomatoes have gotten mashy and then switch of the stove and cool it completely.In a bowl of curd, add the mashy tomatoes, the ground coconut paste, salt, and chopped coriander. Mix it well and the beautiful raita is ready. Serve it and enjoy it with the Tastiest Lemon Rice!!!!
