Lauki Raita
Lauki Raita is a refreshing and cooling Indian side dish made with boiled bottle gourd (lauki) mixed into smooth curd, seasoned with mild spices. Light on the stomach and rich in hydration, it’s ideal for summer meals and great for digestion and acidity relief. Best served chilled alongside pulao, paratha, or khichdi.

- Lauki Grated – ½ cup
- Salt – ½ tsp
- Ice cubes – few
- Curd – 1 cup
- Salt – to taste
- Black salt – ½ tsp
- Roasted cumin (pounded) – 2tsp
- Ice cubes – few
- Water a dash
Begin by peeling the lauki, Deseed the lauki by using length wise cuts and reserve the flesh. Grate the flesh using the biggest size on the grater. While the lauki is freshly grated, transfer the lauki into boiling water, seasoned with water. Give it a nice stir and boil for 2-3 minutes on high flame. This removes any unwanted flavours.
Drain the lauki and transfer into a bowl with ice water to stop the cooking. Drain the lauki again and using light hand press out any extra water from the lauki. Transfer to a bowl and add in the curd, salt, black salt, roasted cumin, a few ice cubes and a dash of water and mix well. Transfer to the serving bowl, garnish with a spring of coriander and serve.
