Kromeskies Recipe

Cooked chicken and mushrooms wrapped in bacon, coated in batter, and deep-fried.

Ingredients
  

  • 2 chopped onions
  • 100 gm finely chopped mushrooms
  • 25 gm butter
  • 100 gm fresh breadcrumbs
  • 2 egg yolks
  • Salt and pepper
  • Grated nutmeg
  • 250 gm cooked chicken/ham
  • 16 rashers bacon

For the Batter:

  • 175 gm flour
  • Pinch of salt
  • 1 tsp oil
  • 275 ml water
  • 2 egg whites
  • Oil for frying

For Mustard Mayonnaise:

  • 1 Tbsp wholegrain mustard
  • 125 ml mayonnaise
  • 1 tsp honey
  • Pinch of chilli powder
  • Salt and pepper

Instructions
 

  • Cook onions and mushrooms in butter until liquid dries.
  • Combine with crumbs, yolks, cream, seasoning and nutmeg.
  • Stir in chopped meat/chicken.
  • Flatten bacon and wrap around Spoonfuls of mixture. Chill.

For the Batter:

  • Mix flour and salt with oil and water.
  • When smooth, fold in whipped egg whites.
  • Dip bacon rolls in mixture. Deep fry in hot oil until golden.
  • Serve immediately with mustard mayonnaise.

For the Mayonnaise:

  • Mix the ingredients together and serve with Kromeskies.
