To begin with slightly crush the jackfruit seeds and remove the outer thin cover. Please note, peeling is easy if the seeds are dry.
Wash the jackfruit seeds, pat dry and chop them into pieces.
Transfer the chopped jackfruit seeds into a pressure cooker. Add required water, a big pinch of turmeric, little salt and cook them until soft.
Next take oil in a frying pan and heat it. Add in 1/2 tsp mustard seeds and 1/2 tsp cumin seeds. Optionally you can add broken red chili and urad dal.
When the mustard seed splutters and in asafoetida and turmeric powder.
Followed by add in slit green chilies and curry leaves.
Then add in finely chopped onion and ginger.
Saute until onions turn translucent under medium flame.
Next add in cooked jackfruit seeds. You can drain the excess water if required. I added very little water and hence I didn't drain it.
Also sprinkle the salt as per your taste. Give a quick mix.
Add in grated coconut coriander leaves. Mix well for a minute. Switch off the stove. Serve it as snacks. Or serve it with hot steaming rice or chapathi.
