Gur Ki Revri

Gur Ki Revri is a traditional North Indian winter delicacy made from jaggery (gur) and sesame seeds (til). These crisp and crunchy disc-shaped sweets are rich in warmth and nutrition, making them perfect for cold weather. Often enjoyed during festivals like Lohri and Makar Sankranti, Gur Ki Revri offers a delightful combination of sweetness and nuttiness with a satisfying crunch.

Ingredients
  

  • Sesame – 150gms/1cup
  • Jaggery (crushed) – 180gms/ 1¼ cups
  • Water a dash
  • Black cardamom seeds – 1tbsp
  • Cardamom powder – ½ tsp
  • Baking soda – ½ tsp
  • Ghee – 1tbsp

Instructions
 

  • Heat a pan and add sesame and dry roast it for 3-4 mins. Remove and keep aside to cool completely.
  • In a fresh pan add gur and water and bring to a boil. Now strain it into a fresh pan and bring to a boil again till it froths.
  • Add a tbsp of ghee to get a shine on the final revdi. Boil till gur reaches a hard crack stage. Now add cardamom powder and baking soda, mix and add sesame (retain a handful of the sesame).
  • Turn off the heat and remove the pan from the stove. Keep stirring the mixture to slightly cool it. Once it is a bit cool but still quite warm to touch and pliable break off a small piece and roll it into a round, dip in sesame and flatten it. Repeat with the remaining mixture. Once cool it will be crunchy and ready to serve.
