Golagappa Pani or Pani Puri Ka Pani Banane Ki Recipe

Golagappa Pani, also known as Pani Puri Ka Pani, is a tangy, spicy, and flavorful water that is the heart of the beloved Indian street food – Pani Puri or Golgappa. This refreshing pani is made using mint leaves (pudina), coriander leaves, green chilies, tamarind pulp (imli), black salt, roasted cumin powder, chaat masala, and lemon juice.
Blended into a smooth paste and then diluted with chilled water, this pani offers the perfect balance of heat, sourness, and spice. It can be adjusted to taste—spicy or mild, sour or slightly sweet. Serve it chilled with crispy puris and spiced mashed potatoes or Ragad for the ultimate street-style snack experience at home.

Ingredients
  

Pudina Pani 

  • Mint – 1cup
  • Coriander – 2cups
  • Green chilli – 1no
  • Ginger – a small piece
  • Roasted cumin – 1tbsp
  • Chaat masala – 1½ tbsp
  • Amchur – 1tbsp
  • Black salt – 2tsp
  • Salt – to taste
  • Lemon juice – ¼ cup
  • Chilled Water – 3cups

Imli Pani 

  • Tamarind Chutney – 1 cup
  • Sugar – 2tbsp
  • Kashmiri Chilli powder – 1tsp
  • Water – 2cups  

Guava Pani 

  • Guava Juice – 2cups
  • Kashmiri Chilli powder – ½ tsp
  • Roasted Cumin (pounded) – 1tsp
  • Lemon Juice – 3tbsp
  • Salt – to taste
  • Black salt – ½ tsp
  • Mint leaves – few

Cola Pani

  • Cola Drink – 2cups
  • Lemon juice – 3tbsp
  • Black salt – ½ tsp
  • Salt – to taste
  • Roasted Cumin (pounded) – 1tsp
  • Chaat Masala – ½ tsp

Orange Pani 

  • Orange Juice – 2cups
  • Coriander Powder – 1tsp
  • Chaat masala – 1 tsp
  • Salt – to taste 
  • Mint leaves (chopped) – 1tbsp

Accompaniments

  • Golgappe – 30nos
  • Boiled & diced potato 
  • Kala chana (boiled) 
  • Black salt 
  • Chilli powder  
  • Roasted cumin powder 
  • Onion chopped (optional)  

Instructions
 

For Pudina Pani

  • Begin by putting the mint leaves, coriander leaves, green chilli, ginger and the rest of the ingredients along with the chilled water in a blender. Blend at high, adjust seasoning and serve chilled.

For Imli Pani

  • Begin by taking the tamarind chutney in a bowl, add in the sugar, Kashmiri chilli powder and ice water. Mix well until the sugar dissolves and serve.

For Guava Pani

  • Take the guava juice in a mixing bowl and add in the Kashmiri chilli powder, and all of the other ingredients. Mix well and serve.

For Cola Pani

  • Take the cola in a mixing bowl and add in the lemon juice, and all of the other ingredients. Mix well and serve.

For Orange Pani

  • Take the orange juice in a mixing bowl and add in the coriander powder, and all of the other ingredients. Mix well and serve.
