Glazed Green Beans

A glaze made by simmering sherry wine and vinegar with brown sugar adds a perfect sweet-and-sour flavor to fresh green beans.

Ingredients
  

  • 1 tsp. olive oil
  • 1 shallot, finely chopped
  • 1 1/2 c. dry sherry wine
  • 1/2 c. sherry vinegar
  • 2 Tbsp. brown sugar
  • 1 Tbsp. cold unsalted butter
  • 1 lb green beans, blanched
  • Kosher salt and pepper

Instructions
 

  • Heat olive oil in a medium saucepan on medium. Add shallot and cook until tender, 4 to 5 minutes.
  • Add sherry wine, vinegar, and brown sugar and simmer until syrupy and reduced by ¾, 15 to 20 minutes.
  • Whisk in butter, then toss with green beans and ½ teaspoon each salt and pepper.
