Fruit Rabri, or Fresh Fruit Rabri, is a rich and creamy Indian dessert made by slow-cooking milk until thick and then sweetening it with sugar and flavored with cardamom. Once cooled, it is topped or mixed with a variety of fresh fruits like apples, bananas, pomegranate, and grapes. This chilled dessert is both indulgent and refreshing, perfect for festive occasions or as a summer treat.

- Full cream Milk 3 cups + 2 tblsp
- Sugar 4-5 tblsp
- Fruits* 1/2 cup
- Corn flour 1 tsp
- Milk masala 2 pinches
- Saffron a pinch (optional)
- Sliced almonds few (optional)
In a heavy bottomed pan, add the milk.
Boil the milk in a medium low flame.
You can a keep a ladle on the top of the pan as shown in the picture,to avoid the milk from overflowing.
Stir the milk in between frequently.
Once the milk starts reducing, mix the corn flour with 2 tblsp room temperature milk without any lumps.
Add this to the pan.
Stir well.
Let this boil for some time, till the milk reduces little and thickens.
After adding the corn flour the milk mixture may get burnt so take care and stir continuously.
Once done switch off the flame.
Add sugar and mix well.
Add the milk masala to this. If you do not have milk masala, add a pinch of cardamom.
Add the pinch of saffron.
Mix well. Allow this to cool completely.
Keep this chilled.
Just before serving add the fruits and sliced almonds (if adding)
