Dodi | Punjabi Kada Doodh
Dodi, also known as Punjabi Kada Doodh, is a traditional spiced milk drink from Punjab. It is made by boiling milk with whole spices like black pepper, cardamom, fennel seeds, and sometimes turmeric or saffron. This drink is often consumed warm, especially during winters, for its rich flavor and potential health benefits such as boosting immunity and aiding digestion.

- Khus Khus (soaked) – ¼ cup
- Cashewnuts (soaked) – ¼ cup
- Almonds (soaked) – ¼ cup
- Melon seeds (soaked) – 2tbsp
- Water or Milk – a dash
- Ghee – 3tbsp
- Milk – ½ lit
- Cardamom powder – ½ tsp
- Sugar – to taste
Strain the soaked khus khus into the mixer, add the soaked cashews, almonds and melon seeds.
Add a dash of milk or water to make the mixture smoother.
Heat some ghee in a pan and roast the blended seed mixture in it till the seed mixture looks light golden brownish.
Once done - you can either make the entire Mawa into Dodi or reserve some of it for making Dodi later.
Add milk to the pan with the Dodi and sprinkle some cardamom powder and sugar to taste, allow it to dissolve and you are ready serve!
