- Sichuan Peppercorn - 2 tbsp
- Dried Chili Peppers - ½ Cup
- Toasted Sesame Oil - ¼ Cup
- Roasted Peanut Oil – ¾ Cup
- Garlic Clove (Small), minced – 1
- Shallot (Small), minced – 1
- Star Anise – 1 pod
- Cinnamon Stick (Small) – ½ Stick
- Fresh Ginger, minced - 1 tbsp
Make sure to prepare all the ingredients with all the exact measurements or according to your preference.
In a skillet, heat up the peanut oil over a low flame of 175 F.
Using a food processor/blender, grind the dried chilli peppers and Sichuan peppercorns for it to break into smaller pieces.
Strain or sift out the Sichuan pepper shells and then disregard them.
When the temperature of the peanut oil reaches 225 F over moderately low heat, it’s time to add all the spices.
Add all the spices into the heated peanut oil and gradually mix them together.
Let it simmer for 5 minutes at 225 F.
Prepare a jar and pour the mixture inside as well as the sesame oil.
Store and refrigerate mala sauce for up to a month.
