- Whole Wheat flour (आटा) – 1½ cups
- All-purpose flour (मैदा) – 1½ cups
- Salt (नमक) – ¾ tsp
- Butter, soft (नरम मक्खन) – 1 tbsp
- Water (पानी) – as required
- Butter, melted (मक्खन) – 1 tbsp
- Whole wheat flour (आटा) – for dusting
- Chilli flakes (कुट्टी मिर्च) – ½ tsp
- Garlic, sliced (लहसुन) – 1 tbsp
- Coriander, chopped (ताज़ा धनिया) – handful
- Oil (तेल) – for frying
For Chutney Raita
- Mint leaves (पुदीना पत्ता) – ½ cup
- Coriander (धनिया पत्ता) – 1½ cups
- Green chillies (हरि मिर्च) – 2 nos
- Ginger (अदरक) – a tiny piece
- Salt (नमक) – to taste
- Chaat masala (चाट मसाला) – 2 tsp
- Black salt (काला नमक) – ½ tsp
- Roasted cumin (भुना जीरा पाउडर) – 1 tsp
- Lemon, small (नींबू) – 1 no
- Curd (दही) – 2 cups
To prepare the dough, begin by mixing equal parts of atta and maida. Add salt and butter, then rub the ingredients together until they are evenly combined. Gradually add water to form a soft dough. Coat the dough with oil and let it rest for 10 minutes. After the resting period, divide the dough into larger pieces (Pedas) and let them rest for another 10 minutes.
Next, roll out each Peda thinly. Spread butter on top and sprinkle with sliced garlic, chili flakes, chopped coriander, a pinch of salt, and some dry flour. Shape the rolled dough as demonstrated in the video. Cook until golden brown on both sides.
For the chutney raita, blend together fresh mint, coriander, green chilies, ginger, salt, chaat masala, black salt, crushed roasted cumin, and curd until smooth. Optionally, you can add lemon for extra flavor.
