Chef John's Peach Blackberry Flognarde
I was searching for a fitting name for this unique blend of peaches, blackberries, thyme, and black pepper, reminiscent of a clafoutis. I stumbled upon an article mentioning that in France, a clafoutis using fruits other than cherries is called a flognarde. The word "flognarde" amused me so much that even if this recipe hadn't turned out as delicious as it did, I'd still make it regularly, just for the joy of saying "flognarde."

- ⅔ cup white sugar
- ½ cup whole wheat flour
- 3 eggs
- ½ teaspoon vanilla extract
- ½ teaspoon fresh thyme leaves

- 1-pint fresh blackberries
- 1 fresh peach, sliced
Preheat oven to 350 degrees F (175 degrees C). Butter a casserole dish.

Spread blackberries and peach slices out in the prepared casserole dish. Pour batter over the top.
