- Beef sirloin (thinly sliced) - 500g
- Sausages (chorizo or longaniza) - 250g
- Potatoes (peeled and cut into thick strips) - 4
- Red onion - 1
- Tomatoes - 2
- Locoto peppers (or substitute with jalapeños) - 2
- Garlic - 3 cloves
- Vegetable oil - 1/4 cup
- Soy sauce - 2 tbsp
- Vinegar - 2 tbsp
- Cumin powder - 1 tsp
- Salt and pepper - to taste
- Fresh parsley - for garnish
In a large pan, heat vegetable oil over medium-high heat.
Add sliced beef and sauté until browned. Remove and set aside.
In the same pan, cook sausages until browned and cooked through. Remove and set aside.
In the pan, add more oil if needed and fry the potato strips until golden and crispy. Remove and set aside.
In the same pan, sauté sliced red onions until softened.
Add minced garlic and diced tomatoes. Cook until the tomatoes are soft.
Mix in soy sauce, vinegar, cumin powder, salt, and pepper.
Return the cooked beef, sausages, and crispy potatoes to the pan. Toss everything together until well coated in the sauce.
Add chopped locoto peppers for spice, adjusting according to your desired heat level.
Garnish with fresh parsley and serve hot.
