half fill a pan with water and boil, add a spot of olive oil and a pinch of salt to the boiling water, add the penne to the boiling water and simmer until tender but with a slight bite
set the oven to 200C 400F or gas mark 6, put the bread on the baking tray and place in the oven follow the instructions on packaging
heat the olive oil in the frying pan, chop the bacon into pieces, add the bacon to the pan, cook till crisp and golden brown
peel and crush the garlic using the garlic crusher or chop finely add to the bacon, cook for a minute or two, Add the chilli flakes, and tomatoes to the bacon, cook till sauce thickens to a jam like consistency, taste and add sugar if necessary
cut the camembert into small cubes, grate the emmenthal, add the cheeses and cream to the bacon mixture
drain the pasta and add to the sauce, if sauce is to tight add some of the reserved cooking water from the pasta, taste and season with salt and pepper if necessary, wash and tear the basil leaves, add the basil to the sauce saving a little to sprinkle on the top
remove the garlic bread from the oven
share the pasta equally between the serving bowls, serve with garlic bread, grated parmesan and a sprinkle of basil
