Assamese Roasted Chicken
Classic Assamese Roasted Chicken is a flavorful dish rooted in the traditional cuisine of Assam. - (small pieces) - 1kg Chicken
- to taste Salt
- 1 tsp Turmeric
- 1tbsp Chilli powder
- 1tbsp Roasted Cumin Powder
- 2tsp Black pepper (crushed)
- 5tbsp Lemon juice
- ¼ cup Black Sesame
- 4tbsp Mustard Oil
- 1 tbsp Garlic chopped
- 2tbsp Ginger chopped
- 4tbsp Onion chopped
- 2 no green chilli chopped or basting Ghee/Butter
Marinate the chicken with salt, turmeric, chilli powder, cumin, black pepper and lemon juice. Keep it aside for at least 20mins to an hour.
Separately heat a pan and add black sesame seeds to dry roast them for a minute. Remove them to a plate and cool completely. Add the cooled seeds to the jar of a mixer grinder along with mustard oil, garlic, ginger, green chillies and onion. Grind them to a paste without using any water.
Remove the paste and keep aside. Squeeze out excess water from the chicken and place it in a fresh bowl, add the black sesame paste to it and mix it properly.
Keep aside the chicken for 30mins. In the meantime, heat your OTG or oven to 180c. Place the chicken in the pre heated oven and cook for about 30mins or till the chicken cooks through and through.
Remove and immediately baste with ghee or butter. Serve with a lemon wedge and a fresh garden salad of your choice.
