Apple and Date Pie Recipe

- 250 gm flour
- 125 gm diced chilled butter
- 2 egg yolks
- 2-3 Tbsp water
For the Filling:
- 750 gm apples - peeled, cored and diced
- 1 tsp butter grated rind
- 2 limes
- 5 gm chopped, seeded dates
- 3-4 Tbsp sugar
For the Glaze:
- 2 egg whites, beaten
- 1 Tbsp castor sugar
For the Pastry:
Sieve flour into a bowl.
Rub in butter until mixture resembles breadcrumbs.
Bind with yolks and water.
Knead lightly until smooth.
Cover and chill for 30 minutes.
For the Filling:
Soften apples in butter with rind and dates.
Stir in sugar. Cool.
Divide pastry in half.
Roll out half to line an 8" pie plate.
Fill with apple mixture.
Moisten edge with a little water.
Roll out remaining pastry and use to cover pie. Chill.
Glaze with beaten egg and sugar.
Bake at 190 degrees C for 20-25 minutes until golden in color.
Serve with cream.
